Paprikás Krumpli
"Paprika potatoes"

A fast, delicious, & simple traditional Hungarian  meal!

4 large potatoes
1/2 large yellow onion
1/2 red or yellow bell pepper
1 medium tomato
1 tbsp paprika
2 tsp salt
2 cloves garlic, minced
1 tbsp oil
1 cup water

*sausage, bacon szalonna, or ham if desired

Serves 4

Peel and slice potatoes lengthwise into 1 inch wide wedges. (or pre-cook the potatoes by boiling and slice into pieces)


Peel and finely chop the onion. Dice the bell pepper and the tomato.

In a 3 qt saucepan heat the oil and saute the onion, garlic, salt, bell pepper and tomato until the onion is soft, about 5 minutes.


Add the paprika and the 1 cup of water and stir together.
Add the potatoes, stir, and then heat to simmer for approximately 20 minutes or until the potatoes are cooked but still slightly firm. (alternately, pre-cooked potatoes can be used)

Serve as a main dish with fresh bread and a salad of your choice.

*Traditional Hungarian paprikas also uses sliced hot paprika sausage, bacon szalonna, or ham in this recipe as well. The meat is added along with the potatoes when cooking.
